Easy Fluffy Vegan Pancakes

Pancakes are a simple and easy weekend breakfast and you can make them as simple or indulgent as you like with your favourite toppings. This recipe calls for only a few simple ingredients you probably already have in your kitchen and can be whipped up in around 10 minutes so you can still have your Sunday lie-in.

INGREDIENTS
1 1/2 cup osts
1 cup plant milk
1 ripe banana
1/4 tsp baking powder
1/4 tsp vanilla extract (optional)

METHOD
Add the oats to your blender and blend until a fine oat flour is made. Add the rest of the ingredients and blend until a smooth batter is formed. The consistency should be thick but pourable.
Ladle into a hot frying pan and cook on either side for around 2-3 minutes or until it no longer sticks and is golden brown. You can cook 3 at once or as many as you can fit into your pan without them touching.
Serve with your favourite toppings like nut butter, fruit, chocolate sauce or maple syrup.
