Apple Pie Porridge | The Recipe Book

The cooler months are rolling in and my morning routine is changing from smoothies for breakfast to more porridge oats. I love the creaminess and thickness of porridge as well as it being a blank canvas for me to add any taste I like to. The world becomes my oyster (well, the porridge does anyway). Because it's Winter I chose a delicious seasonal version... the apple pie. Classic, simple and tasty. So here's my recipe:

Ingredients

  • 1 cup oats
  • sprinkling of raisins
  • 1 tsp maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 3 tbsp apple sauce
  • sprinkling of pumpkin seeds

Method

1. Pop your oats and raisins (I like to add mine now so they plump up and get nice and juicy, but if you like them drier and more raisin-like, add them at the end) into a saucepan. Pour in enough water to cover the oats and bring to the boil.

2. Once it's bubbling away add in the maple syrup, cinnamon and nutmeg and keep stirring. The oats will plumpen and your porridge will thicken – keep it gloopy or add more water thin it out. Stir for another 3 minutes.

3. Add to a bowl and mix in apple sauce. Top with pumpkin seeds and serve.

You'll feel like you're eating apple pie for breakfast... without having to sneak a slice out of the fridge! It's nutritious, super quick and easy to make and, most importantly, delicious. Let me know if you're planning on making this at home and send me your pics on Twitter and Instagram!
