Coconut Cacao Bliss Balls Recipe

Bliss balls are one of my favourite go-to snacks not only because they’re so delicious it’s like eating dessert before dinner but because they’re easy and fast to whip up, require only a few ingredients and are a super satisfying snack between meals and on-the-go.
These are also great lunchbox snacks for kids to provide slow-release energy and a sweet bite without the sugar highs and crashes. I often take them on long train journeys for a nibble whilst travelling and they’re perfect for sharing as they’re already in grab-and-bize-sized portions.

INGREDIENTS
1 cup almond meal
1/3 cup desiccated coconut (+ more for rolling)
2 medjool dates
1/4 cup maple syrup
1/4 cup cacao nibs

METHOD
Add all ingredients to a blender and mix until well combined.
Form the mixture into bite-sized balls and roll in desiccated coconut.
Ideally refrigerate for an hour before serving and keep in fridge for up to 1 week.
