Garden Salad With Crispy 'Chicken' Croutons Recipe

Who said salads had to be boring? Gone are the days we have to endure boring side-salads with wilted leaves, sad tomatoes and a soggy sprinkling of oil. Salads can be as exciting and delicious as any other meal if we think a little outside of the box.

I love salads and lately I’ve been having a love affair with warm salads. They’re crisp, fresh and light as well as being warming, hearty and satisfying. They’re so versatile and I can always throw in whatever leftovers I have or items that need using up to save on both waste and money. This salad recipe also uses ingredients largely found in glass and paper packaging which are widely recycled or you can upcycle at home. My recent favourite lunch is made using Quorn’s Vegan Hot & Spicy Burgers which is a great meal to transition from cool summer lunches into warmer autumn ones and give a little extra spice to my meal.

I hope you enjoy this simple, 15-minute recipe as much as I do – and never be fooled into thinking salads need to be anything less than fantastic!

MAKES: 1 large main salad for 2 or side salad for 4

PREP: 5 minutes

COOKING: 10 minutes

TOTAL TIME: 15 minutes

INGREDIENTS

2 Quorn Vegan Hot & Spicy Burgers

1/2 head of lettuce, rinsed, drained and roughly chopped

90g of rocket leaves, rinsed and drained 

1/2 cucumber, chopped

5 sun dried tomatoes, chopped

handful of olives, halved

1150g or 1/2 cup artichoke hearts

pickled red onions (add as many or as few as you like)

1/4 cup pumpkin seeds

your favourite salad dressing or 50/50 balsamic vinegar and olive oil

METHOD

Heat a pan on medium heat and fry the Quorn Vegan Hot & Spicy Burgers for approx. 10 minutes (5 minutes each side) or until cooked through evenly and golden on the outside.

Add the rest of the ingredients to a bowl and gently toss. Chop the Quorn Burgers into bite-size pieces and add to the top of your salad.

Drizzle with your favourite dressing, a little olive oil and balsamic vinegar or leave as is and enjoy!

Tip: this is also a great filling inside wraps or pitta breads alongside hummus or sliced avocado.
